My contribution as french native (and resident) :-)
1) In south-East: you have many spots catching
Mistral / Tramontane winds : L'almanarre,
Leucate, Le Jai are the best ones
Bes period: March to October
2) In Brittany (West) : you can expect from
September onwards, strong conditions with
solid swell and consistant winds (SW / W
winds so onshore / side on conditions)
It's not surprising that best wave
ridingtakes place in Brittany.
Prestigious spots : La Torche, Carnac, Quiberon

Mistral and Tramontane winds blow with a strong frequency from March to September...even right now in August, getting 25-30 knots is somehting usual.
Best way to figure out statistics and forecasts is to look at Windguru and select these spots:
1) Almanarre (Close to Hyères)
2) Gruissan
3) La Coudou
4) Le Jai (close to Marseille)
5) Leucate
6) Six Fours / Brutal Beach (Some waves to take)
Almanarre is a small peninsula so verious spots are accessible : flat, waves...
After getting an idea of these stats, you can look on the web very easily some infos on the spots...tell me if you want more infos
